Creamy Balsamic Dressing
1
Add the balsamic vinegar, Italian seasoning, grated garlic, mayonnaise, and parmesan to a small bowl. Whisk to combine.
2
While whisking constantly, slowly dribble the olive oil into the dressing until it's creamy and emulsified. Add salt and pepper, to taste.
Caprese Skewers
1
Bring a large pot of heavily salted water to a rolling boil. Add the tortellini and cook just until the pasta is al dente, according to package directions (usually 3-4 minutes). Drain and rinse with cool water to keep the pasta from further cooking. Toss the pasta with half of the creamy balsamic dressing.
2
Thread one cherry tomato, one mozzarella pearl, one rolled up basil leaf, and one cheese tortellini on a skewer. Repeat with the remaining ingredients until all of the ingredients are used up.
3
Place the skewers on a platter and drizzle them with extra balsamic dressing, to taste. Garnish with freshly-cracked black pepper and enjoy!

Tips & Tricks (5)
- Pre-chill Your Mozzarella ❄️Refrigerate ciliegine mozzarella pearls for at least 30 minutes before skewering to keep them firm and prevent them from becoming too soft or melting during assembly.
- Cook Tortellini Al Dente 🍝Reduce pasta cooking time by 1-2 minutes from package directions so tortellini stays slightly firm and won't become mushy when threaded onto skewers.
- Pat Dry for Better Flavor Absorption 💧After cooking, gently pat tortellini and tomatoes dry with paper towels to remove excess moisture, allowing the olive oil and balsamic vinegar to coat and penetrate better.
- Layer Basil Last for Freshness 🌿Add fresh basil leaves to skewers just before serving rather than during assembly to prevent bruising and maintain vibrant color and aromatic oils.
- Make a Quick Balsamic Reduction 🍶Simmer balsamic vinegar with a touch of honey for 2-3 minutes to create a thicker, sweeter drizzle that coats the skewers better than straight vinegar.
