For the fries:
1
Wash potatoes and cut into ½-inch fries. Rinse and soak in cold water for 10 minutes to help remove the starch. While the potatoes are soaking, set a multi-function oven or air fryer to preheat at 400 degrees.
2
Drain potatoes and pat dry with paper towels. Add to a bowl with 2 teaspoons olive oil and seasonings. Toss to coat and place in air fryer basket in middle rack.
3
Set oven to 400 degrees F for 20 minutes, turning halfway through. The fries should be crispy, but you can add an additional 3 to 5 minutes, as needed. Cover and set aside while preparing the salmon.
For the salmon:
1
Cut salmon into pieces that are 2-inches wide. Set aside.
2
Prepare coating station in 3 bowls –
3
Bowl 1: Add cassava flour, ½ teaspoon kosher salt and ½ teaspoon black pepper. Whisk to combine.
4
Bowl 2: Whisk together eggs and 1 teaspoon water.
5
Bowl 3: Add almond flour, dried parsley, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and ½ teaspoon black pepper. Whisk to combine.
6
Use one hand to dredge each piece of salmon into cassava flour mixture, then egg and finally the almond flour mix. Shake off excess and set aside. Repeat until all pieces are coated.
7
Spray coated salmon with a light spritz of avocado spray and place in the air fryer basket on middle rack. Set to air fryer mode and bake for 10 minutes at 400 degrees F. Serve with fries.

Tips & Tricks (5)
- Pat Salmon Dry for Crispy Coating 🐟Use paper towels to thoroughly dry the salmon fillets before breading; excess moisture prevents the almond and cassava flour coating from adhering properly and crisping up in the air fryer.
- Double-Dredge Technique for Extra Crunch 🍞Coat salmon in the flour mixture, dip in beaten egg, then coat again in the flour blend for a thicker, crunchier crust that rivals traditional deep-fried fish and chips.
- Soak Potatoes Before Air Frying 🥔Cut russet potatoes into fries and soak them in cold water for 30 minutes to remove excess starch, resulting in crispier exterior and fluffier interior when air fried.
- Bloom Spices for Maximum Flavor 🌶️Mix your dry seasonings (garlic powder, paprika, cayenne, black pepper) together before coating to ensure even distribution and enhanced flavor infusion into the almond-cassava crust.
- Spray Oil Evenly for Consistent Crispness ✨Use avocado oil spray in brief, even bursts on all sides of both salmon and fries halfway through air frying to promote golden browning without over-oiling the gluten-free coating.
