Instructions

1

In a small mixing bowl, mash the banana well with a fork, then add the brown sugar, olive oil, and vanilla. Stir until completely mixed together.
2
|
Next, add the rolled oats, flour, cinnamon, baking powder and salt to the bowl and stir until well mixed. The cookie dough should be fairly thick but not dry. Add chocolate chips and mix those in as well.
3
|
Cut out a square of parchment paper that fits into your air fryer basket, about 6×6 inches. Do not use foil – the cookie might stick. Place the parchment paper into the air fryer, then scoop the cookie dough onto the center of the parchment paper. Use a spoon to spread the dough out into a large circle with an even thickness. The cookie will puff up a bit as it cooks, but it will not spread. Top with chocolate chips if you’d like. Air fry at 320F for about 8 minutes, or until the edges and top are browning. If your air fryer is already preheated, start with 7 minutes.
4
|
Remove the cookie from the air fryer and let it cool for 5-10 minutes, then enjoy! Leftovers (if there are any) can be stored on the counter wrapped up or in an airtight container for up to 3 days.

Tips & Tricks (5)

  • Banana Ripeness is Critical 🍌
Use a very ripe banana with brown spots for maximum natural sweetness and moisture, reducing the need for added sugar and creating a naturally chewy texture without eggs.
  • Mash Banana Thoroughly for Binding 🥄
Mash the banana until completely smooth with no lumps, as it acts as the egg replacement and binder—this ensures your cookie holds together perfectly without crumbling.
  • Don't Skip the Sea Salt 🧂
The fine sea salt enhances the chocolate and cinnamon flavors while balancing sweetness; sprinkle a tiny pinch on top before air frying for professional depth of flavor.
  • Lower Air Fryer Temperature for Even Cooking 🌡️
Set your air fryer to 350°F instead of higher temperatures to prevent the outside from browning too quickly while the inside stays chewy—check at 7 minutes for your specific model.
  • Cool Briefly Before Enjoying ⏱️
Let the cookie rest for 2-3 minutes on a cooling rack after air frying; this allows the structure to set while maintaining that signature chewy center that makes it irresistible.
