Make the spice paste: In a large bowl, combine the avocado oil (1 teaspoon), chili powder (1 teaspoon), garlic powder (1/2 teaspoon), cayenne pepper (1/4 teaspoon), ground cumin (1/4 teaspoon), dried oregano (1/4 teaspoon), salt (1/4 teaspoon) and lime juice (from 1/2 lime).
2
|
Mix the fajitas: Add the chicken (2-3 thighs, cut into strips), onion (1 small yellow, cut into wedges), and bell peppers (2, seeds & stem removed, cut into chunks) to the same bowl, and toss well until everything is completely covered in the spice paste.
3
|
Air fry: Transfer to an air fryer basket or rack and cook for 15 minutes at 400F. Don’t worry about preheating. Toss the meat and veggies twice during air frying to make sure everything cooks evenly.
4
|
Serve and store: Serve with large soft flour tortillas and your choice of sour cream, shredded cheese, fresh or jarred salsa, and sliced avocado or guacamole. Store leftovers in an airtight container in the fridge for up to 4 days.

Tips & Tricks (5)

  • Pat Chicken Dry for Crispiness 🍗
Pat chicken thighs completely dry with paper towels before coating with the spice paste—this removes surface moisture and allows the air fryer to achieve golden, crispy edges instead of steaming the meat.
  • Don't Skip the Spice Paste Rest ⏱️
Apply the spice paste to chicken and veggies 15-20 minutes before air frying to allow the flavors to meld and the seasonings to adhere properly for maximum taste penetration.
  • Arrange in Single Layer for Even Cooking 📐
Spread chicken and peppers in a single layer without overcrowding the air fryer basket—this ensures consistent heat circulation and prevents steaming, resulting in properly cooked, caramelized vegetables and chicken.
  • Add Acid at the End for Brightness 🍋
Reserve fresh lime juice to squeeze over fajitas immediately after serving rather than mixing into the spice paste, preserving the vibrant citrus notes and preventing the acid from affecting the chicken's texture during cooking.
  • Use Chicken Thighs Over Breasts 🎯
Chicken thighs contain more fat and connective tissue, making them far more forgiving in the air fryer—they stay juicy even with slight overcooking, unlike lean breasts that can become dry and stringy.
