Andes Chocolate Mint Cookies

Instructions

Preheat oven to 375 degrees F.

Prepare the cookie mix according to package directions. Wrap in plastic wrap and chill for at least 15 minutes.

Flatten one tablespoon of the chilled cookie dough into a disc. Place the mint candy in the center and wrap the dough around the candy until it’s completely covered with cookie dough.

Place on a baking sheet, 2 inches apart, and bake for 7-9 minutes, or until cookies are set.

Allow to cook for 2 minuets before removing to a cooling rack to finish cooling.

While the cookies are cooling, melt the chocolate chips in the microwave, stirring every 15 seconds.

Drizzle melted chocolate over the tops of the cookies.

Pat a scant tablespoonful of dough in a thin layer around each mint candy. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 7-9 minutes or until set. Cool for 1 minute before removing from pans to wire racks to cool completely.

In a microwave-safe bowl, melt candy coating; stir until smooth. Drizzle over cookies.
