Cake

1
|
Preheat the oven to 350 degrees F (180 degrees C).
2
|
Grease a 10 cup bundt pan by brushing 1 tablespoon of softened butter all over with a pastry brush, then coat with granulated sugar.
3
|
In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon, all spice, nutmeg, and ginger. Set aside.
4
|
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter, dark brown sugar, and granulated sugar for 2-3 minutes.
5
|
Add in eggs and vanilla, and mix on high speed until very well combined.
6
|
Scrape down the bowl, then alternate adding the dry and wet ingredients (apple cider concentrate, oil, applesauce, and yogurt) until everything is fully combined.
7
|
Pour batter into prepared bundt pan and bake for about 35-42 minutes or until a toothpick inserted comes out clean.
8
|
Allow cake to cool for no more than 10 minutes in the pan, then immediately use a knife to gently loosen the sides and turn out onto a cooling rack.

Coating

1
|
In a small bowl melt the butter, then stir in the apple cider concentrate.
2
|
In a separate bowl, combine the sugar and cinnamon.
3
|
While the cake is still warm brush all of the butter, cider mixture all over the cake. Trust me, you want to use ALL of it!
4
|
Immediately sprinkle the cinnamon sugar all over the cake.
5
|
Serve the cake warm with a hot cup of apple cider or coffee!

Tips & Tricks (5)

  • Maximize Apple Cider Concentrate 🍎
Use apple cider concentrate instead of regular cider to intensify the flavor—reduce it on low heat for 2-3 minutes before adding to ensure the robust apple cider taste cuts through the cake's sweetness.
  • Greek Yogurt for Moisture Balance 🥄
The Greek yogurt provides both moisture and structure; don't substitute regular yogurt as it contains more liquid and will compromise the cake's crumb density and spice-forward flavor profile.
  • Spice Blooming Technique 🌶️
Toast your cinnamon, nutmeg, ginger, and allspice in a dry pan for 30 seconds before adding to the dry ingredients to awaken their essential oils and deepen their warm, complex flavors in the final cake.
  • Bundt Pan Preparation Matters 🎂
Use a pastry brush to thoroughly coat every crevice of your Bundt pan with softened butter, then dust with flour or cocoa powder—this ensures a perfect release and beautiful presentation of your delicate crumb.
  • Cooling Time is Non-Negotiable ⏱️
Let the cake cool in the pan for 15-20 minutes before turning out; this allows the structure to set properly so the moist crumb won't break apart or stick to the pan.
