As most recipes on my blog do, this one comes together rather quickly. My recipe today is an adaptation from the cookbook Honey and Jam by Hannah Queen. I took Hannah’s Apple Cider Doughnut Cake recipe and lightly adapted it to make it into muffins. Then I added a simple crumble to the top because YUM.

Tips & Tricks (5)
- Reduce Apple Cider First 🍎Simmer your fresh apple cider on the stovetop for 10-15 minutes to concentrate its flavor and reduce moisture, preventing overly wet muffins while intensifying the autumn taste.
- Room Temperature Ingredients 🌡️Bring eggs, butter, and apple cider to room temperature before mixing to ensure even incorporation and a uniform, tender crumb structure throughout your muffins.
- Don't Overmix the Batter 🥄Fold wet ingredients into dry ingredients until just combined—overmixing develops gluten and creates tough, dense muffins instead of the light, delicate texture you're aiming for.
- Toast Your Spices 🌟Lightly toast ground cinnamon and nutmeg in a dry pan for 30 seconds before adding them to your dry ingredients to unlock deeper, more complex aromatic flavors.
- Crumble Topping Trick ✨Freeze your crumble mixture for 15 minutes before sprinkling onto muffin batter so it stays intact and creates a crispy, textured topping rather than sinking into the cake.
