Instructions
1
|
Pre-heat the oven to 350 degrees F.
2
|
Start by butterflying your chicken. Place your hand on the top of the chicken breast and cut it down the center (think hamburger) without cutting all the way through. You still want the chicken to be in one piece so make sure you don't cut through to the other side. Open up the chicken breast and lay it flat (it should kind of look like a butterfly). Evenly season with salt, pepper, and garlic powder on both sides.
3
|
Place the cheese and asparagus spears on one half of each chicken breast and close it shut.
4
|
In a large, ovenproof skillet, heat the olive oil over medium high heat. Gently place the chicken in the skillet to sear on both sides until it's a nice golden brown on each side. About 4 minutes per side. The cheese will melt out a little but that's okay.
5
|
Place the skillet in the oven and bake until the thickest part of the chicken reaches 165 degrees. About 15-20 minutes.

Tips & Tricks (5)
- Butterfly with Precision 🔪Create a horizontal pocket by carefully slicing into the thickest part of the chicken breast, leaving edges intact to seal in the filling and prevent cheese from leaking during cooking.
- Blanch Asparagus First 🫒Briefly blanch asparagus for 2-3 minutes before stuffing to ensure it's tender throughout and cooks evenly with the chicken, preventing tough or undercooked spears.
- Pound for Even Cooking 🔨Use a meat mallet to gently pound chicken breasts to uniform thickness before butterflying, ensuring even cooking and preventing dry edges while centers remain moist.
- Secure the Seam 📍Use toothpicks to hold stuffed chicken closed, or sear the seam-side down first for 2 minutes to create a natural seal that locks in moisture and filling.
- Internal Temperature Check 🌡️Insert a meat thermometer into the thickest part without touching the filling—aim for exactly 165°F for perfectly juicy, safe chicken that won't dry out.
