Awesome Bacon and Potato Egg Casserole
Instructions
1
Preheat the oven to 350° F.
2
Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
3
Place two sheets of paper towels on a large plate. Set aside.
4
Place a large skillet over medium-high heat. Add the bacon and fry until brown and crisp, flipping once, 6-8 minutes.
5
Transfer the bacon to the paper-towel-lined plate. Do not discard the bacon fat.
6
Return the skillet to the heat and add the thawed hash brown potatoes. Cook, stirring occasionally with a rubber spatula, until slightly golden brown, 4-5 minutes. Remove from heat.
7
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper.
8
Using clean hands, crumble the bacon into small pieces and add to the egg mixture. Add the potatoes and shredded cheese. Fold with a rubber spatula to evenly distribute.
9
Pour the mixture into the prepared baking dish.
10
Bake the casserole on middle rack of oven until top is golden brown and a toothpick inserted in the center comes out clean, 40-45 minutes.
11
Check to see that casserole is done. Remove from oven or add time as needed.
12
Allow casserole to cool for at least 10 minutes before serving. Cut the casserole into squares, or simply spoon onto plates.

Tips & Tricks (5)
- Precook Bacon for Even Texture 🥓Cook bacon until just crispy before adding to the casserole, then crumble it. This prevents undercooked or rubbery bacon in the final dish and allows you to control the fat content.
- Thaw Hash Browns Slightly 🥔Remove frozen hash browns from the freezer 10-15 minutes before assembly to break up clumps and ensure even distribution throughout the casserole for consistent texture.
- Whisk Eggs with Milk First 🥛Combine eggs and milk in a separate bowl and whisk thoroughly before pouring into the casserole to ensure the custard base cooks evenly and creates a creamy texture.
- Use a Lower Oven Temperature 🌡️Bake at 325°F instead of higher temperatures to allow the egg mixture to set gently without browning the cheese too quickly or creating a rubbery texture on top.
- Let it Rest Before Serving ⏱️Allow the casserole to rest for 10 minutes after removing from the oven so the egg custard fully sets and becomes easier to portion without falling apart.
