  • 2 cup - broccoli florets
  • 2 teaspoon - extra-virgin olive oil
  • ¼ teaspoon - garlic powder
  •  teaspoon - salt
  •   - black pepper
  • 3 strips - bacon

  1. Preheat the oven to 375°F.
  2. Line a large baking sheet with parchment paper.
  3. Cut the broccoli into 1-inch florets and place in a large mixing bowl. Drizzle with olive oil and season with salt, garlic powder, and black pepper.
  4. Dice the bacon into 1/4-inch pieces and place in a large skillet.
  5. Set the skillet over medium high heat. Fry the bacon, stirring frequently with a rubber spatula, just until it begins to render some fat, about 2-3 minutes. The bacon should still be very undercooked. Transfer the bacon and fat to the bowl of broccoli.
  6. Toss the broccoli and bacon until the oil is evenly distributed. Transfer to the parchment-lined baking sheet.
  7. Roast the broccoli and bacon on middle rack of oven for 15 minutes.
  8. Open the oven and stir the broccoli with a rubber spatula. Continue roasting until broccoli is tender and slightly charred and bacon is browned and crisp, 10-15 minutes.
  9. Check to see that dish is done. Remove from oven or add time as needed.
  10. Serve immediately.
