Baked Cranberry Oatmeal
For the Oatmeal
For the Cream Cheese Glaze
Prepare the oatmeal:
1
Preheat the oven to 350 degrees. Spray an 8×8" glass baking dish with cooking spray.
2
In a medium bowl, whisk together the almond milk, egg, maple syrup, orange zest, and vanilla until well incorporated.
3
Add the oats, baking powder, cinnamon and salt to the bowl of wet ingredients and stir until combined. Stir in 1/2 of the cranberries.
4
Pour the oatmeal mixture into the prepared baking dish and top with the remaining cranberries and pecan pieces. Bake in the oven for 30-35 minutes or until golden brown and set. Remove from heat and cool slightly on a wire rack.
Prepare the glaze:
1
Beat the softened cream cheese in a medium bowl with a handheld mixer at medium speed until smooth. Add the powdered sugar and beat until incorporated, then beat in the orange juice and zest until combined. If you'd like your glaze to be thinner, add a bit more orange juice.
2
Drizzle over the baked oatmeal, serve, and enjoy!

Tips & Tricks (5)
- Prevent Soggy Oatmeal with Proper Liquid Ratio 💧Use exactly 1.5 cups almond milk to 1 cup oats to avoid a mushy texture; baking concentrates liquids, so less is more compared to stovetop oatmeal.
- Toast Pecans Before Baking for Maximum Crunch 🥜Lightly toast pecan pieces at 350°F for 5-7 minutes before adding to the batter to intensify their nutty flavor and preserve their crispness through baking.
- Use Fresh Cranberries, Not Dried, for Tartness 🫐Fresh cranberries burst during baking and release bright, natural acids that balance the sweetness; toss them lightly in a bit of the dry mixture to prevent clumping.
- Make Cream Cheese Glaze While Oatmeal Cools ✨Prepare the glaze in the last 5 minutes of baking so it stays spreadable; whip softened cream cheese with powdered sugar and fresh orange juice until silky for easier application.
- Zest Orange Before Juicing for Maximum Flavor 🍊Always zest your orange first while the skin is intact, then juice it; this gives you vibrant citrus notes in both the batter and glaze without extra prep steps.
