Tips & Tricks (5)
- Choose Firm Nectarines 🍑Select nectarines that yield slightly to pressure but aren't soft—they'll hold their shape during baking and develop concentrated sweetness without becoming mushy.
- Toast Pistachios for Depth 🌰Lightly toast the pistachios in a dry pan for 2-3 minutes before chopping to intensify their nutty flavor and add a subtle bitterness that balances the honey's sweetness.
- Zest Lemon Before Squeezing 🍋Harvest the lemon zest first, then juice—the zest adds brightness to both the yogurt sauce and the baked fruit, cutting through richness and enhancing flavor complexity.
- Strain Greek Yogurt Overnight 🥄Drain full-fat Greek yogurt through cheesecloth for 4-8 hours before making the sauce to achieve an ultra-creamy, luxurious texture that coats the fruit beautifully.
- Add Sauce Just Before Serving 🍯Prepare the honey yogurt sauce up to 2 hours ahead, but drizzle it over warm nectarines just before serving to prevent the yogurt from becoming watery and maintain optimal texture contrast.
