Banana Chocolate Chip Muffins

Instructions

1
In a small saucepan over medium heat, melt the butter. Continue cooking, stirring often, until it turns golden brown and smells nutty. Remove from heat and let it cool slightly.
2
In a large bowl, add the browned butter and light brown sugar. Whisk until well combined. Add the eggs, vanilla extract, cinnamon powder, mashed bananas, and Greek yogurt. Mix until smooth and fully incorporated.
3
Sprinkle in the baking powder, baking soda, and salt. Add the all-purpose flour and gently mix just until combined. Do not overmix.
4
Gently fold in the chocolate chips or chunks until evenly distributed.
5
Divide the batter evenly into a lined muffin tin. Bake at 425°F (220°C) for 5 minutes, then reduce the oven temperature to 375°F (190°C) without opening the oven. Continue baking for 15 minutes, or until a toothpick inserted into the center comes out clean.
6
Remove from the oven and allow the muffins to cool before serving.

Tips & Tricks (5)

  • Use Overripe Bananas for Maximum Moisture 🍌
Choose bananas with brown spots or even fully brown skin—they contain more natural sugars and moisture, creating incredibly tender muffins without drying out.
  • Greek Yogurt Substitution for Richness 🥛
Replace some or all of the oil with Greek yogurt to reduce calories while adding protein and creating a denser, more luxurious crumb structure.
  • Toast Your Chocolate Chips 🍫
Lightly toast chocolate chips in a dry pan for 1-2 minutes before folding them in to intensify their flavor and prevent them from sinking to the bottom.
  • Don't Overmix the Batter 🥄
Mix dry and wet ingredients separately, then combine just until barely blended—overmixing develops gluten and creates tough, dense muffins instead of tender ones.
  • Fill Muffin Cups Strategically 🧁
Fill cups two-thirds full, then add a few chocolate chips directly on top before filling to the rim—this creates beautiful pockets of melted chocolate throughout.
