Tips & Tricks (5)
- Drain Your Bananas Properly 🍌After mashing bananas, place them in a fine-mesh strainer for 5 minutes to remove excess moisture, which prevents soggy fritters and ensures a lighter, fluffier texture.
- Use Room Temperature Ingredients 🌡️Bring eggs and milk to room temperature before mixing to create a smoother batter that incorporates evenly and produces more uniform, tender fritters.
- Toast Your Cornmeal First 🌽Lightly toast the cornmeal in a dry pan for 2-3 minutes before adding to the batter to enhance its nutty flavor and prevent a gritty texture in the finished fritters.
- Oil Temperature is Critical 🔥Maintain oil at 350°F using a thermometer—too cool creates greasy fritters, too hot burns the exterior before cooking the inside; test with a small drop of batter first.
- Don't Overmix Your Batter ✋Mix dry and wet ingredients just until combined with visible lumps remaining; overmixing develops gluten and creates tough, dense fritters instead of light and airy ones.
