Tips & Tricks (5)
- Banana Ripeness is Key 🍌Use ripe bananas with brown spots for maximum sweetness and easier mashing, which creates a smoother batter and better flavor integration throughout the fritters.
- Don't Overmix the Batter ✋Fold ingredients together gently until just combined; overmixing activates gluten and creates dense, tough fritters instead of light, fluffy ones.
- Oil Temperature Control 🌡️Maintain oil between 350-365°F for optimal results—too cool produces greasy fritters, while too hot burns the exterior before the interior cooks through.
- Dry Your Corn Thoroughly 🌽Pat corn kernels dry with paper towels before adding to batter to prevent excess moisture that would make the fritters soggy and prevent proper browning.
- Toast the Cornmeal First 🔥Lightly toast cornmeal in a dry pan for 2-3 minutes before mixing to deepen its nutty flavor and add subtle complexity that elevates the final dish.
