Instructions
1
|
Cut the bananas into 1/4 inch slices. I like to make slices on a diagonal bias so they’re a little bit longer than circles.
2
|
One at a time, dip the banana slices into the batter, coating all over, shaking off the excess batter into the bowl and place on a buttered griddle or skillet over medium heat.
3
|
Cook for 1-2 minutes on each side or until golden.
4
|
Serve with desired accompaniments such as maple syrup, honey*, powdered sugar, or fresh fruit.

Tips & Tricks (5)
- Slice Bananas Strategically 🍌Cut bananas into thin rounds (¼-inch) and pat dry with paper towels to prevent excess moisture from making the batter soggy and causing uneven cooking.
- Add Mashed Banana to Batter 🥄Incorporate mashed banana directly into your pancake batter before cooking for deeper banana flavor and natural sweetness that reduces the need for added sugar.
- Use Medium-Low Heat for Even Cooking 🔥Cook these bite-sized pancakes at medium-low heat rather than medium-high to ensure the outsides don't brown too quickly before the insides fully cook through.
- Freeze for Make-Ahead Convenience ❄️Cool the pancake bites completely, then freeze on a baking sheet before transferring to freezer bags—they'll reheat perfectly in the toaster or microwave for busy mornings.
- Rest Batter for Fluffier Bites ⏰Let your pancake batter sit for 5-10 minutes after mixing to allow the leavening agents to activate, resulting in noticeably lighter and fluffier pancake bites.
