Instructions
1
|
First, in a microwave safe bowl, microwave the chocolate chips. Microwave for 15-30 second intervals until completely melted.
2
|
To the melted chocolate, mix in powdered sugar and peanut butter. Mix until smooth.
3
|
Then add the chow mein noodles to the melted chocolate and peanut butter mixture. With a silicone spoon or spatula, gently fold the noodles into the mixture until evenly coated.
4
|
Next, grease a standard sized muffin tin with cooking spray. Use a paper towel to wipe away excess oil.
5
|
Add the chocolate haystacks to the pan using a rounded tablespoon or cookie scoop, drop a tablespoon into each slot and then press down with the back of the tablespoon to make an indent in the middle.
6
|
Top each of the chow mein noodles cookies with 3 chocolate eggs in the middle of the nests.
7
|
Allow to set in the fridge for 20 minutes or until solid. Remove from the tins and serve!

Tips & Tricks (5)
- Toast Chow Mein Noodles First 🥢Lightly toast the chow mein noodles in a dry skillet for 2-3 minutes before mixing to enhance their crunch and nutty flavor, preventing them from becoming soggy.
- Temper White Chocolate Properly 🍫Melt white chocolate chips slowly over low heat or use a double boiler to prevent seizing; add a teaspoon of coconut oil for smoother consistency and easier mixing.
- Work Quickly Before Setting ⏱️Once you combine the melted chocolate mixture with noodles, work rapidly to spoon onto parchment paper before it hardens, as white chocolate sets faster than regular chocolate.
- Chill Eggs Separately for Better Placement 🥚Place candy eggs in the freezer for 15 minutes before pressing them into the warm nests so they adhere better and won't sink into the still-soft chocolate base.
- Balance Peanut Butter Ratio 🥜Use a 1:2 ratio of peanut butter to white chocolate to avoid overwhelming the delicate white chocolate flavor while maintaining structural integrity and creamy texture.
