Instructions
1
First, in a microwave safe bowl, microwave the chocolate chips. Microwave for 15-30 second intervals until completely melted.
2
To the melted chocolate, mix in powdered sugar and peanut butter. Mix until smooth.
3
Then add the chow mein noodles to the melted chocolate and peanut butter mixture. With a silicone spoon or spatula, gently fold the noodles into the mixture until evenly coated.
4
Next, grease a standard sized muffin tin with cooking spray. Use a paper towel to wipe away excess oil.
5
Add the chocolate haystacks to the pan using a rounded tablespoon or cookie scoop, drop a tablespoon into each slot and then press down with the back of the tablespoon to make an indent in the middle.
6
Top each of the chow mein noodles cookies with 3 chocolate eggs in the middle of the nests.
7
Allow to set in the fridge for 20 minutes or until solid. Remove from the tins and serve!

Tips & Tricks (5)
- Temper White Chocolate Properly 🍫Melt white chocolate chips in short 20-30 second microwave intervals, stirring between each, to prevent seizing and ensure smooth, glossy coating that sets evenly on your nests.
- Toast Chow Mein Noodles First 🥢Lightly toast the chow mein noodles in a dry skillet for 2-3 minutes before mixing to intensify their nutty flavor and reduce sogginess as they absorb moisture from the peanut butter.
- Create Nest Shape with Ice Cream Scoop 🥄Use a small ice cream scoop or muffin tin to form uniform, perfectly-shaped nests, then gently press the center with your thumb while the mixture is still warm to create the ideal pocket for candy eggs.
- Chill Before Adding Eggs 🧊Allow nests to set in the refrigerator for 15-20 minutes before placing Cadbury eggs on top, ensuring the noodle structure is firm enough to hold the candies without collapsing or shifting.
- Balance Peanut Butter Ratio Perfectly ⚖️Use equal parts peanut butter and white chocolate by weight (not volume) to achieve the ideal creamy-to-crunchy ratio—too much peanut butter makes nests dense, too little makes them crumbly.
