Tips & Tricks (5)
- Coat Blueberries in Flour 🫐Toss fresh blueberries in a tablespoon of flour before folding them into the batter to prevent them from sinking to the bottom during baking.
- Room Temperature Ingredients 🌡️Bring eggs and sour cream to room temperature before mixing to ensure smooth, lump-free batter and better cake texture with optimal moisture.
- Cinnamon Streusel Technique 🤎Mix your cinnamon streusel topping with cold butter using your fingertips until it resembles coarse breadcrumbs, then distribute half on the batter before adding blueberries and the remaining half on top for even distribution.
- Lemon Zest at the End ✨Add lemon zest in the final seconds of mixing to preserve its bright, aromatic oils rather than breaking them down during prolonged stirring.
- Sour Cream Substitution Secret 🥄If using Greek yogurt instead of sour cream, thin it with a splash of milk to match the consistency and ensure the cake stays moist and tender rather than dense.
