2
|
In a large separate bowl, cream butter and sugar until fluffy (2–3 minutes). Add eggs one at a time. Stir in vanilla, lemon zest, lemon juice, and sour cream. Make sure to zest lemon before cutting it in half!‍
3
|
In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gently fold dry ingredients into wet until almost combined.
4
|
In a separate bowl toss blueberries and flour till combined and then pour it into the cake batter and gently combine.
5
|
Spread batter into a greased or parchment-lined 8x8-inch pan. Sprinkle a few blueberries on top if there are any leftover. Add the crumble streusel evenly over the top.
6
|
Bake at 350°F (175°C) for 45-48 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Let cool in pan for 15 minutes. Remove cake from can and place on a cooling rack till cool. Finish with powdered sugar.

Tips & Tricks (5)

  • Coat Blueberries in Flour 🫐
Toss fresh blueberries in a tablespoon of flour before folding them into the batter to prevent them from sinking to the bottom during baking.
  • Room Temperature Ingredients 🌡️
Bring eggs and sour cream to room temperature before mixing to ensure smooth, lump-free batter and better cake texture with optimal moisture.
  • Cinnamon Streusel Technique 🤎
Mix your cinnamon streusel topping with cold butter using your fingertips until it resembles coarse breadcrumbs, then distribute half on the batter before adding blueberries and the remaining half on top for even distribution.
  • Lemon Zest at the End ✨
Add lemon zest in the final seconds of mixing to preserve its bright, aromatic oils rather than breaking them down during prolonged stirring.
  • Sour Cream Substitution Secret 🥄
If using Greek yogurt instead of sour cream, thin it with a splash of milk to match the consistency and ensure the cake stays moist and tender rather than dense.
