Tips & Tricks (5)
- Coat Blueberries in Flour 🫐Toss your blueberries in a tablespoon of flour before folding them into the batter to prevent them from sinking to the bottom and ensure even distribution throughout the cake.
- Room Temperature Ingredients Are Essential 🌡️Bring eggs and sour cream to room temperature before mixing to create a smoother, lump-free batter that incorporates properly and yields a tender crumb.
- Toast Your Streusel Topping 🥐Pre-bake your cinnamon streusel mixture for 3-5 minutes before adding it to the batter so it becomes extra crunchy and won't get soggy from the cake's moisture.
- Maximize Lemon Flavor Balance 🍋Add lemon zest to the dry ingredients and lemon juice to the wet ingredients separately to distribute citrus flavor evenly and prevent the acid from activating the baking soda prematurely.
- Test Doneness with a Toothpick 🔍Insert a toothpick in the center of the cake (avoiding blueberries) and look for a few moist crumbs clinging to it—this indicates perfect moisture without underbaking.
