Instructions
1
|
Pour boiling water over tea bags and steep until dark. Refrigerate or place in the freezer until cool or cold. This step generally takes 30 minutes, but can also be done overnight.
2
|
Follow package directions for tapioca pearls. I bring 10 cups of water to a boil, add the pearls. When they rise to the surface, turn the heat to medium for 3 minutes. Lower the heat to low and cook another 3 minutes or until the pearls are soft and chewy. Pour the pearls into a colander to strain water.
3
|
Place the tapioca pearls while still warm in a bowl and top with honey. Stir the pearls and honey to thoroughly coat. Allow to cool for 5 minutes.
4
|
Place the ice in a blender and pulse until crushed if desired.
5
|
Divide the tapioca pearls and honey mixture between 2 glasses. Then, divide the ice, tea, and milk evenly between the two glasses and stir to combine.

Tips & Tricks (5)
- Master the Boba Timing ⏱️Cook tapioca pearls for exactly the time listed on package directions, then immediately transfer to ice water to stop cooking and prevent mushiness. Slightly undercook them by 1-2 minutes for a firmer, chewier texture.
- Brew Tea at Optimal Temperature 🫖Use water heated to 160-180°F for delicate teas like green or white, and 200-212°F for black tea to avoid bitterness that can overpower your drink. Let it steep for only 3-5 minutes, then cool completely before adding to milk.
- Create Layered Sweetness Naturally 🍯Mix honey directly into warm (not hot) tea to preserve its enzymes and flavor, then adjust sweetness at the end rather than relying on the milk alone. This gives you better control over overall taste without excessive sugar.
- Use Cold Milk Technique for Creaminess 🥛Add chilled milk to already-cooled tea to prevent curdling and create a smooth texture; pour milk slowly while stirring gently to achieve proper emulsification and a silky mouthfeel.
- Prepare Boba in Honey Syrup 🫧Toss freshly cooked boba pearls in a light honey or brown sugar syrup immediately after cooling to prevent them from sticking together and add subtle sweetness that won't dilute your drink. Store in the syrup until ready to use.
