Tips & Tricks (5)
- Temper Your Brie Properly 🧈Cut the brie into small cubes and let it sit at room temperature for 10 minutes before adding to the warm sauce to ensure it melts smoothly without becoming grainy or separating.
- Use Pasta Water as Liquid Gold 💧Reserve 1-2 cups of starchy pasta water before draining, then use it gradually to adjust sauce consistency and help emulsify the cheese for a silkier, more cohesive sauce.
- Build Your Flavor Base First 🧄Toast your minced fresh garlic in butter for 30-45 seconds before adding cream to deepen the garlic flavor and prevent the raw bite that powdered garlic alone can bring.
- Low Heat is Your Best Friend 🔥Keep the sauce on low to medium-low heat when melting the cheese to prevent the cream from breaking and the cheese from becoming stringy or curdled.
- Finish with Cold Butter Finish 🧈Whisk in a tablespoon of cold butter at the very end off heat to add shine, richness, and a velvety mouthfeel that elevates the entire dish to restaurant quality.
