  • ½ pound - pasta
  • 1 ½ cup - broccoli florets
  • 3 tablespoon - butter
  • ½  - onion
  • 3 cloves - garlic
  • 3 tablespoon - all-purpose flour
  • 2 cup - milk
  • 1 ½ cup - cheddar cheese
  • ½ cup - mozzarella cheese
  •   - Salt
  •   - Black pepper
  •   - Reserved pasta water

  1. Bring a large pot of salted water to a boil. Add pasta and cook until a few minutes from al dente.
  2. Add broccoli to the same pot and continue cooking until pasta is al dente and broccoli is tender. Drain, reserving some pasta water.
  3. In a separate pan, melt butter and sauté diced onion until soft. Add minced garlic and cook until fragrant.
  4. Stir in flour and cook for 1–2 minutes to form a roux.
  5. Gradually pour in milk, whisking constantly to prevent lumps. Simmer until thickened.
  6. Add cheddar cheese and stir until melted and smooth. Season with salt and pepper.
  7. Combine cooked pasta and broccoli with the cheese sauce. Add a splash of pasta water to adjust consistency.
  8. Transfer to a baking dish, top with more cheddar and mozzarella, and broil until melted and bubbly.
  9. Serve hot.
