Brown Butter Double Chocolate Banana Bread
Instructions
1
Melt the butter in a saucepan over medium heat until it becomes golden brown, nutty, and fragrant. Remove from heat and let it cool slightly, it should still be liquid but no longer hot.
2
Mash the bananas in a mixing bowl. Add the brown sugar, white sugar, slightly cooled brown butter, heavy cream, eggs, and vanilla extract. Mix until smooth and well combined.
3
In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
4
Add the dry ingredients to the wet mixture and gently fold until just combined. Stir in the 150 g chocolate chips.
5
Pour the batter into a lined loaf pan and sprinkle the remaining 40 g chocolate chips on top.
6
Bake at 180°C for about 50 minutes. After the first 30 minutes, loosely cover with foil or move the loaf to a lower rack to prevent over-browning.

Tips & Tricks (5)
- Brown Butter Mastery 🧈Cook butter over medium heat for 5-7 minutes until it turns golden amber with a nutty aroma, then cool completely before mixing into batter to prevent cooking the eggs and preserve that signature nutty flavor.
- Banana Ripeness Sweet Spot 🍌Use bananas with brown speckles and slightly soft exteriors for maximum sweetness and moisture; overripe bananas (mostly brown) actually contain less sugar as starches have converted to alcohol.
- Double Chocolate Layering 🍫Mix cocoa powder directly into dry ingredients and fold chocolate chips in gently at the very end to distribute both chocolate types evenly and prevent the chips from breaking apart during mixing.
- Moisture Lock with Heavy Cream ☁️Substitute a portion of milk with heavy cream (about 2-3 tablespoons) to create an ultra-moist, fudgy crumb that stays tender for 3-4 days without drying out.
- Perfect Doneness Testing 🔍Insert a toothpick into the center - it should have moist crumbs clinging to it (not clean), indicating fudgy brownies-like texture; slightly underbaking this loaf creates the signature richness and moisture.
