Melt the butter in a saucepan over medium heat until it becomes golden brown, nutty, and fragrant. Remove from heat and let it cool slightly, it should still be liquid but no longer hot.
2

Mash the bananas in a mixing bowl. Add the brown sugar, white sugar, slightly cooled brown butter, heavy cream, eggs, and vanilla extract. Mix until smooth and well combined.
3
|
In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
4
|
Add the dry ingredients to the wet mixture and gently fold until just combined. Stir in the 150 g chocolate chips.
5
|
Pour the batter into a lined loaf pan and sprinkle the remaining 40 g chocolate chips on top.
6
|
Bake at 180°C for about 50 minutes. After the first 30 minutes, loosely cover with foil or move the loaf to a lower rack to prevent over-browning.

Tips & Tricks (5)
- Brown Butter Perfection 🧈Cook butter over medium heat for 5-7 minutes, swirling occasionally until it turns golden amber with a nutty aroma, then cool completely before mixing to prevent curdling the eggs and preserve those complex flavors.
- Banana Ripeness Sweet Spot 🍌Use bananas with brown speckles and slightly soft flesh for maximum natural sweetness and moisture; overripe bananas (mostly brown) add excess liquid that can make the crumb dense and gummy.
- Cocoa Powder Blooming Technique 🍫Whisk cocoa powder with a small amount of hot water or melted chocolate to create a smooth paste before adding to the batter, which dissolves lumps and intensifies chocolate flavor throughout.
- Don't Overmix After Flour Addition 🥄Fold dry ingredients into wet ingredients with just 8-10 gentle strokes—overmixing develops gluten and creates a tough, dense crumb instead of the soft, fudgy texture this recipe demands.
- Cooling and Storage Strategy ❄️Wrap the completely cooled loaf in plastic wrap and store at room temperature for 24 hours before slicing; this allows moisture to redistribute evenly, resulting in a softer, more tender crumb with better chocolate distribution.
