Add eggs, vanilla extract and molasses, and whisk until well combined.
5

In a separate bowl mix flour, ginger, cinnamon, nutmeg, cloves, salt and baking powder till combined.

Tips & Tricks (5)

  • Brown Butter Perfection 🧈
Watch your butter carefully as it browns—once it turns golden amber with a nutty aroma (about 5-7 minutes), immediately remove from heat and let it cool slightly before mixing. This prevents burning and ensures that signature rich, complex flavor isn't lost.
  • Bloom Your Spices 🌟
Mix your ground spices (ginger, cinnamon, cloves, nutmeg) with the molasses before adding to the wet ingredients—this releases their essential oils and creates a more integrated, vibrant spice profile throughout the blondies.
  • Don't Overmix the Batter ✋
Stop mixing as soon as the flour is just combined to avoid developing gluten, which would result in tough, cake-like blondies instead of that desired thick and soft texture.
  • Chocolate Chip Distribution 🍫
Reserve a handful of chocolate chips to fold in last and press some directly into the batter surface before baking for guaranteed chocolate in every bite and those beautiful pockets of melted richness.
  • Underbake for Maximum Softness ⏱️
Remove the blondies when a toothpick inserted in the center still has a few moist crumbs clinging to it—they'll continue cooking slightly as they cool, resulting in that perfect chewy-soft interior rather than overbaked dryness.
