Tips & Tricks (5)
- Master the Brown Butter Stage 🧈Cook butter over medium heat until it turns golden amber with a nutty aroma (about 5-7 minutes), then cool completely before mixing into dough to prevent melting the other ingredients and preserve that deep caramelized flavor.
- Chill Dough for Crispy Edges 🧊Refrigerate your dough for at least 30 minutes before pressing into mini pie tins; this prevents spreading and creates those signature crispy, defined edges while keeping the center molten.
- Toast Your Chocolate Chips 🍫Lightly toast your semi-sweet chocolate chips in a dry skillet for 2-3 minutes before adding to dough to intensify their flavor and enhance the overall richness of the cookie pie.
- Nail the Bake Time Precision ⏱️Bake until edges are deep golden but the center still jiggles slightly when gently shaken (typically 11-13 minutes for minis); this ensures a crispy exterior with that essential gooey, underbaked center.
- Bloom Your Salt for Extra Depth 🧂Use Kosher salt as a finishing sprinkle on top of the batter before baking to create pockets of salinity that amplify the brown butter's nutty complexity and balance the sweetness.
