Season chicken on both sides with 1 teaspoon of All Purpose Seasoning Blend.
3
|
Heat 1 tablespoon of Mazola Corn Oil in a large, oven safe skillet over medium high heat.
4
|
Sear chicken on each side – about 2-3 minutes per side.
5

Transfer skillet to oven and bake for 20 minutes or until internal temperature of chicken is 160℉.

In a bowl, combine the chopped tomatoes, shallots, garlic and basil.
2

Sprinkle the mozzarella cheese on top of the tomato mixture and return the chicken to the oven for 5 minutes.
5
|
Remove chicken from the oven and drizzle with balsamic glaze before serving.

Balsamic Glaze

Bring balsamic vinegar to boil in a small saucepan.
2
|

Tips & Tricks (5)

  • Pound Your Chicken Evenly 🔨
Pound chicken breasts to uniform ½-inch thickness to ensure even cooking and prevent dry edges while the center finishes cooking.
  • Macerate Your Tomatoes 🍅
Toss diced tomatoes with salt, minced garlic, and shallots 15-20 minutes ahead to release juices and concentrate flavors before topping the chicken.
  • Achieve the Perfect Sear 🔥
Pat chicken completely dry and use medium-high heat with corn oil for 4-5 minutes per side to develop a golden crust while keeping the interior juicy.
  • Balance Your Balsamic Glaze ⚖️
Reduce balsamic vinegar by half over low heat and drizzle sparingly at the end—this concentrates the tangy-sweet flavor without overpowering the fresh tomato topping.
  • Add Basil at the Last Second 🌿
Tear fresh basil just before serving and stir into the tomato mixture to preserve its delicate aroma and prevent it from turning dark and bitter.
