Tips & Tricks (5)
- Chill the Dough Before Baking 🧊Refrigerate your dough for at least 30 minutes before shaping and baking to prevent spreading and ensure fluffy, tender puffs with distinct, airy crumbs.
- Use Finely Grated Aged Cheddar 🧀Grate sharp or extra-sharp aged cheddar cheese into fine pieces just before mixing to maximize cheese flavor distribution and prevent clumping in the dough.
- Don't Overmix the Dough 🥣Mix just until ingredients combine to avoid developing gluten, which will make your puffs tough instead of light and tender like a delicate scone.
- Toast Seeds Before Coating 🌱Lightly toast your sesame or poppy seeds in a dry pan for 2-3 minutes before coating the puffs to enhance their nutty flavor and create better adhesion to the dough.
- Oven Spring Success 🌡️Preheat your oven for 15 minutes and bake at 400°F on the middle rack to ensure proper oven spring and golden-brown exteriors with moist, fluffy interiors.
