Instructions
1
Heat a pan over medium heat and sauté the chopped onion until soft and translucent. Add the ground beef and cook while breaking it apart. Once browned, add tomato paste and stir briefly to develop flavor. Pour in the water and season with salt, pepper, paprika, and garlic powder. Let it simmer until most of the liquid has reduced and the mixture is thick and flavorful. Remove from heat and let cool slightly.
2
Place a small amount of shredded cheese onto each tortilla. Add a spoonful of the beef mixture on top. Roll tightly and place seam-side down. Repeat until all filling is used.
3
Heat oil in a pan over medium-high heat. Fry the taquitos seam-side down first so they seal. Turn occasionally and fry until golden brown and crispy on all sides. Remove and drain briefly on a wire rack.
4
In a small saucepan over low heat, warm the cream. Add the grated cheddar and stir continuously until fully melted and smooth. Season lightly with salt if needed. Serve warm.

Tips & Tricks (5)
- Pre-Cook and Cool Your Beef Filling 🧊Cook the seasoned ground beef completely and refrigerate it for at least 30 minutes before rolling—this prevents the tortillas from becoming soggy and makes filling much easier without tearing.
- Seal Your Taquitos Properly 🔐Lightly dampen the edge of each tortilla with water before rolling and sealing to create a strong seal that won't unravel during frying, ensuring they stay intact and crispy.
- Maintain Oil Temperature for Perfect Crispness 🌡️Keep your frying oil at exactly 350°F (175°C) using a thermometer—too hot and they brown too quickly, too cool and they absorb excess oil and become greasy instead of crispy.
- Temper Your Cheddar Sauce Correctly 🧀Add shredded cheese to warm (not boiling) cream off the heat, then stir gently until melted—this prevents the cheese from becoming grainy or separating while creating a silky, luxurious sauce.
- Double-Stuff for Premium Results 💪Layer your filling with beef on the bottom and a small amount of shredded cheddar on top before rolling—the melted cheese seals the filling inside during frying for explosive flavor in every bite.
