Instructions
1
|
Grill tortillas until lightly charred on one side; set aside.
2
|
In a large skillet (I prefer to use cast iron), heat canola oil over medium high heat.
3
|
Add onion and sauté until translucent and lightly browned, about 5 minutes.
4
|
Remove onion from skillet; set aside.
5
|
Add enchilada sauce to skillet and warm over medium low heat.
6
|
Place a thin layer of sauce in the bottom of a 13×9 casserole dish.
7
|
Begin assembling enchiladas by dipping a tortilla into the sauce and placing it on a flat surface.
8
|
Place 1/8 of the chicken down the center of the tortilla; add 1/8 of the onions and a small amount of cheese on top.
9
|
Roll up the enchilada and place it, seam side down, in the casserole dish.
10
|
Repeat with remaining tortillas.
11
|
Pour remaining sauce over the top the enchiladas in the casserole dish and top with the remaining cheese.
12
|
If planning to freeze or make ahead, stop here and cover enchiladas tightly and store in the refrigerator or freezer.
13
|
When ready to eat, bake at 350 for 30 minutes.
14
|
Top with sliced green onions.

Tips & Tricks (5)
- Pre-warm Your Tortillas 🔥Warm tortillas in a dry skillet or over an open flame for 10-15 seconds per side before filling—this makes them pliable and prevents cracking, ensuring perfect enchilada rolls.
- Season Your Chicken Twice 🧂Season the raw chicken before cooking, then taste and adjust again after shredding—the second seasoning ensures the chicken itself is flavorful, not just the sauce.
- Reserve Sauce Before Mixing 🥄Set aside one cup of enchilada sauce before combining with chicken filling, then use this reserved sauce to top the dish for vibrant color and extra flavor without oversaturating.
- Use a Cheese Blend for Better Melt 🧀Combine Cheddar with Monterey Jack or Oaxaca cheese for superior melting and a more complex flavor profile than Cheddar alone—aim for 70% Cheddar, 30% secondary cheese.
- Dip Tortillas in Sauce Before Filling 💧Quickly dip each tortilla in warm enchilada sauce before rolling to create a protective barrier that prevents the tortilla from absorbing excess moisture and drying out during baking.
