Instructions

1
|
Grill tortillas until lightly charred on one side; set aside.
2
|
In a large skillet (I prefer to use cast iron), heat canola oil over medium high heat.
3
|
Add onion and sauté until translucent and lightly browned, about 5 minutes.
4
|
Remove onion from skillet; set aside.
5
|
Add enchilada sauce to skillet and warm over medium low heat.
6
|
Place a thin layer of sauce in the bottom of a 13×9 casserole dish.
7
|
Begin assembling enchiladas by dipping a tortilla into the sauce and placing it on a flat surface.
8
|
Place 1/8 of the chicken down the center of the tortilla; add 1/8 of the onions and a small amount of cheese on top.
9
|
Roll up the enchilada and place it, seam side down, in the casserole dish.
10
|
Repeat with remaining tortillas.
11
|
Pour remaining sauce over the top the enchiladas in the casserole dish and top with the remaining cheese.
12
|
If planning to freeze or make ahead, stop here and cover enchiladas tightly and store in the refrigerator or freezer.
13
|
When ready to eat, bake at 350 for 30 minutes.
14
|
Top with sliced green onions.

Tips & Tricks (5)

  • Pre-Warm Your Tortillas 🔥
Warm tortillas in a dry skillet or over an open flame for 10-15 seconds per side before filling to make them pliable and prevent cracking during rolling.
  • Reserve Sauce Before Mixing 🥄
Set aside 1 cup of enchilada sauce before mixing it with the chicken filling to ensure you have enough sauce to coat the bottom and top of your baking dish for even moisture.
  • Toast Cheese for Better Melting 🧀
Lightly pan-toast your shredded Cheddar cheese over low heat for 1-2 minutes before adding to filling and topping to improve its melting quality and prevent clumping.
  • Quick-Cook Chicken Method ⏱️
Pound chicken breasts to even thickness before cooking, then simmer in seasoned broth for 12-15 minutes instead of baking to save time while maintaining moisture and tenderness.
  • Caramelize Your Onions Properly 🧅
Cook diced onions in canola oil over medium heat for 8-10 minutes until golden and slightly translucent to develop deep flavor and sweetness that enhances the entire dish.
