Tips & Tricks (5)
- Slice Potatoes Uniformly 🥔Use a mandoline or knife to slice potatoes to ¼-inch thickness for even cooking and creamy texture throughout the casserole.
- Make a Proper Roux Base 🧈Cook butter and flour together for 1-2 minutes before adding milk to create a smooth, lump-free cheese sauce that clings beautifully to every ingredient.
- Layer Ham Strategically 🍖Distribute diced ham evenly throughout layers rather than concentrating it on top to ensure every bite has balanced ham and cheese flavors.
- Blend Cheeses for Depth 🧀Mix sharp cheddar with a milder cheese like gruyere or fontina to create complex flavor without overpowering spice notes from paprika and cayenne.
- Cover Then Uncover for Perfect Texture ✨Bake covered for 75% of cooking time to keep potatoes tender, then uncover for the final 15 minutes to develop a golden, slightly crispy top.
