Tips & Tricks (5)

  • Toast Your Ritz Cracker Topping 🥘
Toss crushed Ritz crackers with melted butter and toast them in a 350°F oven for 5 minutes before adding to the casserole—this prevents soggy topping and adds superior crunch and golden color.
  • Make a Proper Roux for Creaminess 🧈
Cook flour and butter together for 2-3 minutes before adding your broth and wine to eliminate raw flour taste and create a silky, luxurious sauce that won't separate or break.
  • Par-Cook Your Broccoli 🥦
Blanch broccoli florets for 2-3 minutes before adding to the casserole so they maintain their bright green color and firm texture rather than becoming mushy after baking.
  • Reserve Half-and-Half for Last 🍶
Add your half-and-half off the heat after combining other sauce ingredients to prevent curdling, then gently fold it in just before assembling—this ensures a smooth, velvety finish.
  • Don't Skip the White Wine Step 🍷
Let white wine reduce by half (1-2 minutes) before adding broth to concentrate flavors and cook off excess alcohol, adding sophisticated depth that elevates this comfort dish beyond ordinary.
