Tips & Tricks (5)
- Pork Rind Moisture Control 🥓Pulse pork rind crumbs into fine, uniform pieces and lightly toast them before mixing into the meat to prevent excess moisture absorption that can make meatballs dense.
- Prevent Sticky Hands 🧊Wet your hands with ice water before rolling meatballs to prevent the ground chicken from sticking, making shaping faster and easier.
- Double-Sear for Caramelization 🔥Sear meatballs in a hot skillet for 2 minutes per side before baking to develop a flavorful crust that locks in juices and intensifies the savory profile.
- Balance Sweetness & Spice 🌶️Add the Swerve brown sugar substitute gradually while tasting the sauce, as keto sweeteners can vary in intensity—this prevents overly sweet meatballs that overpower the heat.
- Garlic Aromatics Timing ⏱️Mince garlic fresh and fold it into the meat mixture just before forming meatballs to preserve its pungent bite, rather than mixing it in advance when flavors dull.
