Tips & Tricks (5)

  • Prevent Dense Meatballs with Gentle Handling 🤲
Use a light touch when mixing the chicken with breadcrumbs and egg—overmixing develops gluten and creates tough, dense meatballs. Mix just until combined, about 30 seconds.
  • Add Moisture with Soaked Breadcrumbs 💧
Soak your breadcrumbs in milk or water for 2-3 minutes before mixing to keep the lean chicken meatballs incredibly tender and juicy, preventing them from drying out during cooking.
  • Pan-Sear Before Simmering for Golden Crust ✨
Brown the meatballs in olive oil over medium-high heat for 2-3 minutes before adding them to the tomato sauce—this creates a flavorful, golden exterior that adds depth to the dish.
  • Reserve Pasta Water for Sauce Silkiness 🍝
Save 1 cup of starchy pasta water and add a splash to the tomato sauce before tossing—this emulsifies the sauce and helps it coat the pasta and meatballs beautifully.
  • Add Mozzarella at the Last Second ⏱️
Toss the hot pasta and meatballs off the heat, then fold in the bocconcini balls just before serving so they melt gently without becoming tough or rubbery.
