Instructions

1
|
Preheat the oven to broil.
2
|
Pour bread crumbs into a shallow dish and set aside.
3
|
Pat chicken dry with a paper towel.
4
|
Place the chicken on a cutting board, then slice through the middle (as if you were to butterfly each chicken breast, but slice all the way through).
5
|
Season chicken with salt and pepper.
6
|
Spread approximately 1 Tablespoon of mayonnaise on one side of the chicken breasts.
7
|
Place each chicken breast one at a time in the bread crumbs, then season and spread mayonnaise on the bare side. Flip over and coat the other side of the chicken breast with bread crumbs.
8
|
Remove breaded chicken to a clean plate and repeat breading process with all chicken halves.
9
|
Place oil in a skillet over medium heat.
10
|
Once oil is hot, add the chicken breasts and cook until cooked through, about 3-4 minutes per side.
11
|
Remove the chicken to a 9″x16″ casserole dish.
12
|
Broil the chicken about 2-3 minutes until tops are nicely browned.

Tips & Tricks (5)

  • Pound for Even Thickness 🔨
Use a meat mallet to pound chicken breasts to uniform ¼-inch thickness, ensuring even cooking and preventing dry edges while keeping the center juicy.
  • Mayo-Based Coating Secret 🥄
Mix mayonnaise with a pinch of salt and pepper, then brush it on the chicken before dredging in panko for superior adhesion and extra-crispy, golden results.
  • Double-Dredge Technique ✨
After the initial panko coating, lightly spray or brush with mayo again and add a second thin layer of panko for an ultra-crunchy, restaurant-quality crust.
  • Oil Temperature is Critical 🌡️
Heat oil to 350°F before cooking—use a thermometer to avoid soggy breading from cooler oil or burnt coating from overheated oil.
  • Rest Before Serving ⏱️
Let finished cutlets rest on a wire rack for 2-3 minutes to maintain crispness and allow juices to settle, preventing a soggy bottom.
