1/3
Chicken Parmesan with Vodka Sauce Pasta
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain the rest.
2
Set up three bowls: one with flour, salt, pepper, and garlic powder; one with scrambled eggs; and one with breadcrumbs.
3
Dredge chicken breasts in flour, then egg, then breadcrumbs. Press to coat evenly.
4
Heat canola oil in a skillet over medium-high heat. Fry chicken until golden brown and cooked through. Set aside.
5
In another pan, melt butter with olive oil. Add minced garlic and sauté until fragrant.
6
Add tomato paste and cook for a few minutes to deepen flavor.
7
Pour in vodka and stir, allowing alcohol to cook off slightly. Then add heavy cream and bring to a simmer.
8
Season with salt and pepper. Lower heat and stir in Parmesan until smooth.
9
Spoon some vodka sauce over the fried chicken and top with mozzarella. Broil until cheese is melted and bubbly.
10
Toss the cooked pasta in the remaining vodka sauce with a splash of pasta water and a bit more Parmesan.
11
Serve pasta with the chicken on top. Garnish with extra Parmesan and enjoy.

Tips & Tricks (5)
- Pound Chicken Evenly 🔨Pound chicken breasts to uniform ¼-inch thickness between plastic wrap to ensure even cooking and prevent dry edges while centers remain undercooked.
- Triple-Dredge Technique ✨Use flour, beaten egg, then breadcrumbs in sequence, and let the breaded chicken rest in the fridge for 15 minutes before frying to create an extra-crispy, golden crust that won't fall off.
- Vodka Flame Reduction 🔥Add vodka to the sauce and let it simmer for 2-3 minutes to allow the alcohol to burn off while the acidity cuts through the cream, creating a balanced, sophisticated flavor profile.
- Starchy Water Magic 💧Reserve pasta water before draining and add 1-2 tablespoons to your vodka sauce to emulsify it, creating a silky coating that clings to the pasta instead of pooling at the bottom.
- Broiler Timing Strategy ⏱️Broil for only 2-3 minutes on high until the mozzarella is bubbly and golden—any longer and your chicken will dry out; keep it close to the heat source for even browning.
