Instructions
1

In a small bowl toss chicken with pesto just to coat.
2
|
Place 1 tortilla on a flat surface in front of you. Place 1/4 of the spinach onto the center of a tortilla and top with 1/4 of the peppers and carrots.
3
|
Place 1/4 of the chicken on top of the vegetables.
4
|
Create a secure wrap by folding the sides inward, then folding the bottom up over the filling. Tuck it in tightly and roll it up snugly. Repeat with the remaining tortillas and ingredients.

Tips & Tricks (5)
- Pound Your Chicken Flat 🔨Pound chicken breasts to an even ¼-inch thickness before cooking to ensure uniform doneness and faster cooking time, preventing dry edges while centers finish cooking.
- Warm Your Tortillas Properly 🔥Lightly toast whole wheat tortillas in a dry skillet for 15-20 seconds per side to make them pliable and prevent cracking when rolling, plus it adds subtle nutty flavor.
- Season Pesto Before Spreading 🧂Taste your pesto and adjust seasoning with salt and pepper before spreading on wraps, as the mild tortilla and fresh vegetables won't mask underseasoning.
- Prep Vegetables Thin and Uniform 🥕Cut carrots and bell peppers into thin, lengthwise strips rather than chunks to ensure they stay crisp, roll easily without bulging, and create better texture balance in each bite.
- Pat Spinach Completely Dry 💧Use paper towels to thoroughly dry baby spinach leaves before assembly, as excess moisture will wilt the leaves and make wraps soggy within minutes of preparation.
