Instructions

1
|
Start by placing your pretzels in an even layer on a baking sheet that has been lined with parchment paper.
2
|
In a microwave-safe bowl, melt the semi-sweet chocolate by heating it in 30-second intervals. Stir the chocolate well after each interval until it is completely melted and has a smooth texture.
3
|
Coat the pretzels with the melted chocolate, then arrange a uniform layer of M&M s and peanuts on top of it.
4
|
Heat sugar in a medium saucepan over medium heat, stirring continuously. As the sugar starts to clump together and take on a light amber hue, keep stirring to prevent it from burning.
5
|
After the sugar has fully melted, proceed to add the butter. Take caution as the butter may create bubbles during this step.
6
|
Combine the sugar and butter, stirring until the butter is fully melted. Use a whisk to blend the mixture thoroughly. Gradually add the heavy cream while continuing to stir.
7
|
Boil for 1-2 minutes, then take off the heat and mix in sea salt, letting the caramel harden. Afterward, pour the caramel onto the pretzels. It is not necessary to use all of it.
8
|
Wrap and keep in the refrigerator to cool for a couple of hours. If you're in a hurry, you may choose to put it in the freezer. Cut into squares before serving.

Tips & Tricks (5)

  • Temper Your Chocolate Properly 🍫
Melt chocolate slowly over a double boiler and cool it slightly before spreading to ensure a smooth, glossy finish that snaps cleanly when set, rather than becoming dull or grainy.
  • Caramel Temperature Control 🌡️
Use a candy thermometer and stop heating your caramel at 248°F (firm-ball stage) to achieve the perfect chewy texture that won't harden into an inedible shell once cooled.
  • Strategic Topping Placement ⏰
Add pretzels and peanuts while the chocolate is still warm but set enough to hold them, then sprinkle M&M's last so they stay vibrant and don't sink or melt into the surface.
  • Sea Salt Finishing Touch 🧂
Dust the bark with fleur de sel or premium sea salt only after the chocolate has fully set to preserve the salt crystals' crunch and prevent them from dissolving into the chocolate.
  • Parchment Paper Hack 📄
Use parchment paper on your baking sheet and refrigerate for quick removal—the bark will release effortlessly and you can easily break it into rustic, uneven pieces for a premium artisanal presentation.
