Chocolate Caramel Pretzel Bark

Salted Caramel

Instructions

1
Start by placing your pretzels in an even layer on a baking sheet that has been lined with parchment paper.
2
In a microwave-safe bowl, melt the semi-sweet chocolate by heating it in 30-second intervals. Stir the chocolate well after each interval until it is completely melted and has a smooth texture.
3
Coat the pretzels with the melted chocolate, then arrange a uniform layer of M&M s and peanuts on top of it.
4
Heat sugar in a medium saucepan over medium heat, stirring continuously. As the sugar starts to clump together and take on a light amber hue, keep stirring to prevent it from burning.
5
After the sugar has fully melted, proceed to add the butter. Take caution as the butter may create bubbles during this step.
6
Combine the sugar and butter, stirring until the butter is fully melted. Use a whisk to blend the mixture thoroughly. Gradually add the heavy cream while continuing to stir.
7
Boil for 1-2 minutes, then take off the heat and mix in sea salt, letting the caramel harden. Afterward, pour the caramel onto the pretzels. It is not necessary to use all of it.
8
Wrap and keep in the refrigerator to cool for a couple of hours. If you're in a hurry, you may choose to put it in the freezer. Cut into squares before serving.

Tips & Tricks (5)

  • Temper Your Chocolate Properly 🍫
Melt semi-sweet chocolate to 88-90°F, then cool to 82°F before spreading on parchment for a glossy finish and satisfying snap when you break the bark.
  • Toast Pretzels for Extra Crunch 🥨
Lightly toast mini pretzels at 300°F for 3-4 minutes before adding to remove moisture and intensify their salty flavor, preventing sogginess in the finished bark.
  • Add Toppings While Chocolate Sets 🎯
Sprinkle M&M's, peanuts, pretzels, and sea salt within 2-3 minutes of spreading warm chocolate so they adhere perfectly without sinking to the bottom.
  • Make Silky Caramel with Cream Temperature ⏱️
Heat heavy cream to 180°F before slowly adding to hot caramel to prevent spattering and create an impossibly smooth, pourable sauce without graininess.
  • Chill in Stages for Clean Breaks 🧊
Refrigerate bark for 15 minutes until chocolate is firm but still pliable, then snap into irregular pieces; full hardening makes breaking difficult and creates ugly shards.
