Instructions

1
|
Preheat the oven to 350F degrees.
2
|
In the bowl of a standing mixer or with a handheld mixer, cream together the butter and sugar for 4-5 minutes, until light and fluffy.
3
|
Add the eggs, one at a time, making sure to fully incorporate before adding the next one. Add the vanilla.
4
|
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5
|
Alternate between adding the flour mixture and the sour cream to the butter/sugar mixture until combined.
6
|
In a small bowl, combine the brown sugar, walnuts, cinnamon and melted butter, and stir to combine well.
7
|
Pour half the batter into a greased bundt pan, and smooth down with a spatula as this batter is thick and fluffy.
8
|
Sprinkle the brown sugar mixture all over the batter in the bundt pan and pat it down lightly.
9
|
Pour in the remaining batter and smooth down with a spatula.
10
|
Place the bundt pan in the oven and bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.
11
|
Remove from the oven, and allow to cool for 15 minutes. Flip cake out of pan into a cooling rack. If necessary, run a sharp knife carefully around the edges of the pan to loosen the cake to flip.

Tips & Tricks (5)

  • Room Temperature Ingredients 🌡️
Bring eggs, sour cream, and butter to room temperature before mixing to ensure a smooth batter and even crumb structure that prevents lumps and dense pockets.
  • Brown Butter for Streusel 🧈
Use browned butter in your streusel topping instead of regular butter to add a rich, nutty depth that elevates the caramelized cinnamon-walnut flavor.
  • Layering Strategy for Even Distribution 📍
Divide your batter in half and create a streusel sandwich by spreading half the batter, adding the filling layer, then topping with remaining batter to guarantee cinnamon-walnut in every bite.
  • Toast Your Walnuts First 🥜
Lightly toast walnuts in a dry pan for 3-4 minutes before adding to the streusel to intensify their natural oils and create deeper, more complex flavor.
  • Cool Completely Before Serving ⏱️
Allow the cake to cool for at least 2-3 hours before slicing so the crumb sets properly and the streusel holds its structure for clean, impressive servings.
