1/5
Cake
1
Preheat oven to 350F.
2
Grease a 9″ x 11″ casserole dish and set aside.
3
In a large bowl, beat together the white cake mix and cotton candy soda for 2 minutes. Adjust the color with light blue food dye, if desired. (If using, make the cake batter a deeper blue than you want the finished cake to be as it will lighten with baking.)
4
Bake for 25-30 minutes, until an inserted toothpick comes out clean.
5
Allow the cake to cool completely before frosting.
6
Meanwhile, place 1 cup of cotton candy soda in a saucepan and heat until boiling over medium-high heat. Reduce to medium-low and simmer until reduce to 1/4 (2 oz of soda should remain). Allow to cool completely.
Frosting
1
In a large bowl, beat together the butter and powdered icing sugar for 2 minutes, then add the reduced cotton candy soda. Beat to incorporate, then add the milk as needed to achieve a spreadable texture. Adjust the color with blue food dye, if desired.
2
Use an offset spatula to spread the frosting on the cooled cake.
3
To achieve the fun texture shown in the pictures, use short strokes to spread the frosting, then go back over the frosted cake and rough it up a bit.
4
Garnish the cake with sprinkles, as desired.

Tips & Tricks (5)
- Maximize Soda Flavor 🥤Use the cotton candy soda both in the batter and frosting, and add an extra tablespoon to the mixing bowl just before pouring to intensify the signature candy flavor throughout the entire cake.
- Perfect Food Dye Distribution 🎨Add food dye to the soda before mixing into the batter to ensure even, consistent color distribution rather than streaky or uneven blue patches in the finished cake.
- Sprinkle Adherence Secret ✨Press pastel sprinkles into the frosting immediately while it's still wet, then refrigerate for 15 minutes to lock them in place and prevent sliding or falling off during serving.
- Icing Sugar Texture Balance 🍰Sift icing sugar twice before mixing with butter and soda to eliminate lumps, creating a silky frosting that spreads smoothly and holds vibrant color without graininess.
- Room Temperature Technique 🌡️Bring all ingredients, especially butter and soda, to room temperature before mixing to ensure proper emulsification and prevent a dense, heavy cake crumb.
