Tips & Tricks (5)
- Slice Jalapeños Consistently 🔪Cut jalapeños into uniform ¼-inch rings so they cook evenly and absorb the syrup at the same rate, preventing some from becoming mushy while others stay firm.
- Don't Remove All Seeds 🌶️Leave some seeds intact for authentic heat and flavor—remove only if you prefer milder candy, as seeds contribute significantly to the spicy kick.
- Achieve Glossy Perfection ✨Simmer the mixture uncovered until the syrup reduces to a thick, glossy consistency that coats the back of a spoon, creating that signature sticky texture without overcooking the peppers.
- Toast Your Spices First 🥘Briefly toast the celery and mustard seeds in a dry pan before adding to the vinegar mixture to unlock their aromatic oils and deepen the overall flavor profile.
- Sterilize Jars Properly 🏺Process filled jars in a hot water bath for 10-15 minutes to create a proper seal for shelf-stable storage, ensuring your Cowboy Candy stays fresh for months.
