Instructions
1
|
Chop the bacon into half inch pieces, and add to a Dutch oven. Cook over medium heat until done.
2
|
While the bacon is cooking, chop the onion, carrots, potatoes, and smoked sausage.
3
|
Once the bacon is done cooking, remove it from the pot, and drain the grease.
4
|
Add the ground beef and start to brown it, breaking it up as it cooks. Once the ground beef is halfway cooked, add the smoked sausage, onions, and carrots. Continue cooking until the beef is browned and the onions are soft.
5
|
Stir in the garlic, chili powder, cumin, and paprika.
6
|
Add the diced tomatoes, pinto beans, black beans, corn, potatoes, and beef broth. Add the bacon back in as well.
7
|
Bring the mixture to a boil over high heat, stir, and reduce the heat to low. Simmer for about 40 minutes, until the potatoes are tender.
8
|
Add salt and pepper to taste, then serve. Sprinkle with fresh parsley if desired.

Tips & Tricks (5)
- Brown Your Meats Separately 🥓Sear the bacon, ground beef, and sausage in separate batches to develop deep Maillard flavors without overcrowding the pot, which ensures maximum browning and prevents steaming.
- Bloom Your Spices 🌶️Toast the paprika, cumin, and chili powder in the rendered fat for 30-60 seconds before adding broth to unlock their full aromatic potential and deepen their flavors exponentially.
- Layer Your Vegetables Strategically 🥕Add harder vegetables like carrots and potatoes first, then onions and garlic, so everything reaches tender doneness simultaneously rather than some vegetables becoming mushy.
- Save the Beans for Last ⏰Add canned beans and corn in the final 10-15 minutes of cooking to prevent them from breaking down and turning mushy, keeping them intact and maintaining textural contrast.
- Build Depth with Bacon Fat 🧈Reserve the rendered bacon fat and use it as your cooking medium for sautéing onions and garlic, creating a rich, savory foundation that amplifies the overall complexity of the stew.
