Instructions
1
In a large skillet over medium heat, cook the bacon to your preferred level of doneness.
2
Remove the bacon to a paper towel-lined plate.
3
Season the chopped chicken with salt and pepper, then add to the hot bacon grease and cook until browned all over and chicken reaches an internal temperature of 165 degrees F (approximately 6-8 minutes).
4
Meanwhile, prepare the pasta according to package directions. Drain but do not rinse.
5
Remove the chicken to a clean plate as you prepare the ranch sauce.
6
Add the chicken broth to the skillet. Bring to a simmer, then add the sour cream and cream cheese and stir as the cream cheese melts. Add a bit more broth or milk to achieve a smooth consistency that coats the back of a spoon.
7
Season with ranch seasoning.
8
Chop the bacon. Add all but a couple tablespoons of bacon to the skillet, along with 3/4 cup of the cheddar cheese and shredded chicken. Stir to combine.
9
Add the pasta and stir to coat.
10
Sprinkle on remaining cheese, bacon and the green onions before serving.

Tips & Tricks (5)
- Pound Chicken for Even Cooking 🍗Pound chicken breasts to uniform thickness (about ¾ inch) so they cook evenly in the 30-minute timeframe and stay incredibly juicy throughout.
- Render Bacon First for Maximum Flavor 🥓Cook bacon until crispy before adding chicken—the rendered fat creates a flavorful cooking base that enhances the entire dish and prevents the cream sauce from tasting flat.
- Bloom Ranch Seasoning in Fat 🌶️Toast the ranch seasoning in the bacon fat for 30 seconds before adding broth to activate the spices and deepen their flavors instead of using it raw in the sauce.
- Temper Cream Cheese Slowly ❄️Cut cream cheese into small cubes and add it off-heat or low-heat while stirring constantly to prevent lumps and ensure a silky, smooth sauce every time.
- Reserve Pasta Water for Sauce Consistency 💧Save 1 cup of starchy pasta cooking water to thin the sauce to perfect consistency—it helps the creamy sauce cling to noodles better than adding extra broth.
