Instructions

Heat olive oil or butter in a pan over medium heat. Add the ground beef and cook until browned. Stir in salt, pepper, paprika, garlic powder, and tomato paste. Pour in about 50 ml water and let simmer for 2–3 minutes until thickened. If too thin, add a pinch of flour or cornstarch to thicken slightly. Stir in dried parsley, taste, and adjust seasoning if needed.

Lay out all tortillas on your work surface. Sprinkle cheese on one half, then spoon on the beef filling, and top with another layer of cheese. Fold each tortilla in half and press lightly to seal. Prepare all tacos before frying for even cooking.

Heat enough oil in a large pan to lightly coat the bottom. Fry each taco on medium heat for about 2 minutes per side, until golden and crisp. Gently press with a spatula to ensure full contact with the pan. Transfer to paper towels to drain excess oil.

Tips & Tricks (5)
- Double-Fry Tortillas for Maximum Crispness 🍳Fry tortillas briefly in oil first, then shape them in a taco mold and fry again for ultra-crispy, structurally sound shells that won't collapse under toppings.
- Bloom Your Spices in Oil 🌶️Toast the garlic powder and paprika in a small amount of hot olive oil before adding ground beef to unlock deeper, more complex flavors and prevent burnt, bitter tastes.
- Drain Fat Strategically for Better Texture 💧After browning beef, drain excess fat but reserve 2-3 tablespoons to coat the meat - this ensures seasoning adhesion and prevents dry, crumbly texture while maintaining that savory depth.
- Acidify Your Cilantro Lime Sauce Properly 🍋Add lime juice just before serving rather than earlier to preserve the bright, fresh cilantro flavor and prevent the acid from dulling the herbs' vibrant color and taste.
- Mozzarella Placement Technique 🧀Layer cheese on the warm beef while still in the pan before transferring to shells - residual heat melts it evenly, ensuring every bite has creamy, gooey cheese distribution.
