Tips & Tricks (5)
- Pound Chicken Evenly 🔨Use a meat mallet to pound chicken breasts to uniform ¼-inch thickness, ensuring even cooking and faster crisping on all areas.
- Double-Dredge for Maximum Crispiness 🥚After the initial egg and breadcrumb coating, dip the chicken back into egg, then breadcrumbs again for an extra-crunchy, golden exterior that stays crispy even with sauce.
- Reserve Pasta Water Before Draining 💧Save 1 cup of starchy pasta water before draining—use it to adjust your Alfredo sauce consistency and help it cling better to the pasta.
- Low Temperature for Smooth Alfredo 🧈Keep your cream sauce on medium-low heat and stir constantly to prevent the Parmesan from clumping and the cream from breaking into a grainy texture.
- Room Temperature Chicken Before Breading 🌡️Let chicken rest at room temperature for 15 minutes before breading so it cooks evenly inside while achieving a perfectly golden crust without drying out.
