Crispy Chicken Mac & Cheese
Instructions

Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water and drain the rest.

Season flour with salt, pepper, garlic powder, onion powder, and paprika.

Dredge chicken pieces in seasoned flour, then dip into scrambled eggs, then coat in breadcrumbs.

Heat vegetable oil in a saucepan. Fry chicken in batches until crispy and golden. Remove and drain on paper towels. Season with salt.

In a large pan over medium heat, melt butter and add minced garlic. Cook until fragrant.

Pour in heavy cream and season with salt, pepper, paprika, garlic powder, and onion powder.

Simmer for a few minutes, then add cheddar, mozzarella, Parmesan, and Velveeta. Whisk until smooth and creamy.

Add cooked pasta and a splash of pasta water. Stir to coat evenly.

Mix in some of the crispy chicken, reserving a few pieces for topping.

Serve hot, topped with remaining crispy chicken, extra Parmesan, and chopped parsley.
