Heat oil and butter in a pan over medium heat. Add the chopped chicken and cook for 3–4 minutes until it starts to brown. Add chopped chipotle peppers, salt, pepper, paprika, and garlic powder. Stir well and cook until the chicken is golden and almost cooked through.

On one half of each tortilla, add a handful of shredded mozzarella. Spoon the chipotle chicken mixture on top of the cheese. Fold the tortilla in half and press gently.

Heat a clean pan with a bit of butter or oil. Toast the tacos on both sides over medium heat until they’re golden, crispy, and the cheese has fully melted.

In a small bowl, mix mayonnaise, buttermilk, salt, pepper, garlic powder, and parsley. Adjust thickness with a splash of water if needed.
