Heat olive oil in a pan, add the ground beef, and cook until browned. Add salt, pepper, garlic powder, and paprika. Stir in the honey, BBQ sauce, and water. Let everything simmer for 3–4 minutes until the mixture thickens and becomes saucy. Remove from heat.

In a bowl, whisk together Greek yogurt, BBQ sauce, honey, salt, pepper, parsley, and water until smooth and creamy. Adjust thickness with more water if needed.

Lay your tortillas flat and sprinkle cheese on one half. Add a spoonful of the honey-BBQ beef on top, then more cheese. Fold the tortilla gently in half and press down slightly.

Heat a bit of oil in a pan over medium heat. Place the folded tacos in the pan and cook until the bottom is golden and crispy, then flip and crisp the other side. Add more oil if needed to keep them crunchy.
