Tips & Tricks (5)
- Dry Your Potatoes Thoroughly 💧Pat boiled potatoes completely dry with a clean kitchen towel before smashing and crisping—moisture is the enemy of crispiness and prevents proper browning in the oil.
- Use Potato Water for Starch 🥔Reserve 1-2 tablespoons of the starchy potato cooking water to mix back in when smashing—this enhances texture and helps the potatoes crisp up better when pan-fried.
- Smash Unevenly for Texture 🔨Don't over-work the potatoes into a smooth paste; leave them slightly chunky with some skin intact for better crust formation and rustic texture contrast.
- Season Generously at Multiple Stages 🧂Salt the boiling water, season the smashed potatoes, and finish with kosher salt after crisping—layered seasoning ensures flavor throughout rather than just on the surface.
- High Heat for Maximum Crispiness 🔥Use enough olive oil and cook at medium-high heat without stirring frequently, allowing a golden-brown crust to form on the bottom before gently turning portions—this creates the signature crispy exterior.
