Instructions
1
|
Place the first 6 ingredients in a bowl and whisk to thoroughly combine and make sure there are no lumps and sugar is dissolved. Cover and refrigerate for 2 hours or overnight to allow the flavors to develop.
2
|
Whisk the mixture one more time and pour into bowl of ice cream maker. Prepare ice cream based on ice cream maker instructions (my ice cream maker takes 50 minutes).
3
|
5 minutes before the ice cream is complete add the cherries, any additional cherry juice and chocolate chips or walnuts if desired.
4
|
Serve immediately if you prefer a softer texture similar to soft serve or cover and freeze if a harder consistency is desired.

Tips & Tricks (5)
- Chill Your Base Thoroughly ❄️Refrigerate your milk and coconut milk mixture for at least 4 hours or overnight before churning to ensure faster freezing and creamier texture in your ice cream maker.
- Toast Your Cocoa Powder 🍫Lightly bloom your cocoa powder in a small amount of warm milk before mixing into the base to deepen chocolate flavor and eliminate any bitter, raw taste.
- Macerate Cherries for Intense Flavor 🍒Combine fresh cherries with a tablespoon of coconut sugar 30 minutes before mixing to release their natural juices and create a more concentrated cherry flavor throughout the ice cream.
- Fold in Solids at the Right Time ⏱️Add chocolate chips and cherry pieces during the last 2-3 minutes of churning rather than at the start to prevent them from breaking down and maintain distinct texture in every scoop.
- Use Full-Fat Coconut Milk Strategically 🥥Blend the full-fat coconut milk separately and use it as 30-40% of your total liquid base to provide richness without overwhelming the dairy-free profile with coconut flavor.
