Instructions
1
|
Place the first 6 ingredients in a bowl and whisk to thoroughly combine and make sure there are no lumps and sugar is dissolved. Cover and refrigerate for 2 hours or overnight to allow the flavors to develop.
2
|
Whisk the mixture one more time and pour into bowl of ice cream maker. Prepare ice cream based on ice cream maker instructions (my ice cream maker takes 50 minutes).
3
|
5 minutes before the ice cream is complete add the cherries, any additional cherry juice and chocolate chips or walnuts if desired.
4
|
Serve immediately if you prefer a softer texture similar to soft serve or cover and freeze if a harder consistency is desired.

Tips & Tricks (5)
- Chill Your Base Thoroughly ❄️Refrigerate your milk and coconut milk mixture for at least 4 hours or overnight before churning to ensure faster freezing and creamier texture in your ice cream maker.
- Toast Your Cocoa Powder 🍫Lightly toast the cocoa powder in a dry pan for 1-2 minutes before adding to your base to deepen the chocolate flavor and remove any bitter notes.
- Macerate Cherries for Intense Flavor 🍒Toss fresh cherries with coconut sugar 30 minutes before mixing into your base to draw out their natural juices and amplify sweetness without adding extra liquid.
- Balance Fat Content with Full-Fat Coconut Milk 🥥Use the thick cream layer from canned full-fat coconut milk rather than shaking the can, as this higher fat content creates a luxuriously creamy mouthfeel without dairy.
- Prevent Ice Crystals with Cornstarch 🌾Add 1-2 tablespoons of cornstarch to your base before churning to absorb excess moisture and prevent grainy ice crystals from forming during freezing.
