Ingredients

  • 2 cups - filling vegetables
  • 28 ounces - enchilada sauce
  • Tortillas
  • dairy-free yogurt
  • avocado slices
  • guacamole
  • fresh cilantro
  • tomatoes
  • jalapeños

Instructions

  1. Prepare and cook fillings then set aside. Preheat oven to 350F.
  2. Spread about ½ cup enchilada sauce on the bottom of a 9x13 baking dish.
  3. On a clean workspace, carefully stuff filling into tortillas, roll up, and place seam side down in the baking dish. Repeat until you run out of filling mixture.
  4. Pour desired amount of sauce over enchiladas.
  5. Bake for 25 minutes.
  6. Remove from oven, let cool slights, and sprinkle on desired toppings.
