Date Paste
Instructions
1
If you dates are not fresh, I suggest soaking them in hot water for about an hour. Before using, drain out the water.
2
Combine the dates and water in a blender or food processor. Process for 1 minute, scrape down the sides and blend more until smooth and creamy with very few lumps remaining. I suggest stopping the processor about every 30 seconds to scrap down the sides. All together, it could take about 4 minutes.
3
If using the cocoa powder, add it at the end and bend until fully combined.

Tips & Tricks (5)
- Pit and Soak for Smoothness 💧Remove pits from Medjool dates and soak them in warm water for 10-15 minutes before blending to achieve an ultra-creamy, lump-free paste without extra liquid.
- Blend in Stages for Control 🎚️Start with a food processor or high-powered blender on low speed, gradually increasing to high, pausing to scrape sides—this prevents overheating and gives you precise texture control.
- Balance Cocoa Ratios Strategically 🍫Whisk cocoa powder separately with a splash of warm water to dissolve lumps before folding in, ensuring even distribution and preventing bitter cocoa clusters in your paste.
- Store in Glass for Longevity 🏺Transfer cooled date paste to glass jars and refrigerate—it keeps for up to 3 weeks and prevents any metallic aftertaste that plastic containers might impart.
- Add Vanilla or Sea Salt for Depth ✨Enhance complexity by incorporating a pinch of sea salt and a drop of vanilla extract, which amplifies the natural caramel notes of dates and masks any slight bitterness from cocoa.
