Tips & Tricks (5)
- Reserve Dorito Dust for Topping 🧡Crush only half your Doritos for mixing into the casserole base, and reserve the larger pieces for the final layer to maintain maximum crunch and prevent them from becoming soggy during baking.
- Balance Saltiness with Sour Cream 🥄Since Doritos and taco seasoning are already salty, use full-fat sour cream to temper the sodium and create a creamier texture that prevents the dish from becoming overly seasoned.
- Drain Canned Ingredients Thoroughly 💧Drain tomatoes, chilies, and beans in a fine mesh strainer to prevent excess liquid from making your casserole watery and causing the Dorito topping to lose its crispness.
- Layer for Even Cooking 📚Spread the chicken mixture evenly in a single layer before adding cheese and Doritos to ensure consistent heating throughout and prevent the bottom from overcooking while the top remains undercooked.
- Bake Uncovered Last 5 Minutes 🔆Cover the casserole for most of the baking time, then remove foil in the final 5 minutes to allow the Dorito topping to crisp up and the cheese to achieve a golden, bubbly finish.
